Ever since the Crock Pot Mississippi Beef Roast hit the scene, we have been "Mississippi" crazy around here. Now, truth be told, I don't have the first clue why this flavor combo is dubbed Mississippi other than my guess is it originated from a home kitchen in Mississippi, but regardless, we just love the flavor. Can I add vegetables to a Mississippi Roast?

One of the most common question I get asked is how vegetables will do cooking along side a Mississippi Roast. So this weekend when I was making a Crock Pot Mississippi Pork Shoulder, I decided to add my favorite roast veggies to see how I liked the flavor combination. The results were fantastic… and will change how we make our Mississippi dishes from here on out. We loved the flavor and the convenience of having a one-pot meal.

How to Make Mississippi Pork Roast with Vegetables in a Crock Pot

Shopping List for Slow Cooker Mississippi Pork Roast with Vegetables

  • 5 lb Pork Shoulder Roast
  • 1 Envelope Ranch Dressing Mix
  • 1 Envelope Pork Gravy Mix
  • 1/4 Cup Butter
  • 6-8 Pepperoncinis
  • 6 Carrots Peeled and cut into chunks
  • 1 lb Small Red Potatoes
  • 1 Sweet Onion- Quartered

Notes on Slow Cooker Mississippi Pork Roast with Vegetables

  • If you don't like peppers, don't worry… we don't eat the pepperoncinis we just use them to add flavor during cooking. If you are not a fan of their flavor, feel free to leave them off.
  • I have made this recipe with all varieties of pork roasts. If you choose a leaner roast like a tenderloin or a loin, I like to add 1/4 cup more butter and 1/2 cup of water to dilute the mixes since not as much liquid is produced as it is with a fatter roast.

Slow Cooker Mississippi Pork Roast with Vegetables Recipe

We have taken our ever popular Crock Pot Mississippi Pork Roast and added veggies to make a delicious one pot meal in this Slow Cooker Mississippi Pork Roast with Vegetables.

  • 5 lb Pork Shoulder Roast
  • 1 Envelope Ranch Dressing Mix
  • 1 Envelope Pork Gravy Mix
  • 1/4 Cup Butter
  • 7 Pepperoncinis
  • 6 Carrots Peeled and cut into chunks
  • 1 lb Small Red Potatoes
  • 1 Sweet Onion Quartered
  • Place roast in a 6 quart slow cooker and arrange veggies and pepperoncinis around it.

  • Sprinkle with mixes and top with butter.

  • Cook on low for 8 to 10 hours or until roast is fork tender.
